6 cups diced rhubarb

Topping:

I had a homemade derby pie when I was in Louisville but it sucked a lot? So I was surprised when a commercially made derby pie turned out to be amazing.

I prefer Pineapple Cheesecake. and because the word pie isn't there, we must disqualify it from the running.
