List some more really weird stuff on ebay.  Amazing what people will buy.  Word is getting out and I got another person to list for yesterday.  Her son bought a trailer full of furniture and strange collectibles.

Just got back from getting blood drawn for lab work. Also picked up the sleep test machine as they want to retest me for it as I was diagnosed with moderate sleep apnea a few years ago. Its probably much worse now. Then at 2 I get to see the oncologist to find out the results of my cancer enzyme test from last week. Then I get to go fight over turkeys. A fun day indeed.

Yes, there is a lot of room for substitutions; sometimes I use some poblano or jalapeno peppers, or a can of Ro*Tel in there too, depending on how spicy I want it.  The key is "blooming" the coriander and cumin in the oil with the onions and garlic; it intensifies their flavors and makes it very aromatic.

I finally used up my last batch of baked spaghetti and I have a sh*tload of red potatoes I need to use up before they walk away on their own. And I have several fresh jalapeño peppers handy. I won't be able to use the onions but I am ok with garlic so I will just use more of it (I usually double or triple the amounts of garlic shown anyways)

What sort of soup?  I've made this soup a number of times with some modifications, but here is the basic recipe:

North African Potato Soup

Ingredients:
1/4 cup Safflower or other high-quality vegetable oil
2 cups coarsely chopped yellow onion
2 cups chopped red, green, or gold sweet pepper
1 tablespoon ground cumin
2 teaspoons ground coriander
1 entire head garlic, coarsely chopped
2 pounds boiling or baking potatoes, cut to bite-size slices or cubes
3 cups peeled, seeded, and chopped ripe tomatoes, or 1 can (28 ounces) diced Italian tomatoes
1 quart chicken stock or broth
1 tablespoon freshly grated lemon zest
2 tablespoons freshly squeezed lemon juice
Salt
Freshly ground black pepper
Ground cayenne pepper
3 tablespoons Chopped fresh mint or cilantro
Freshly minced lemon zest for garnish
Fresh mint or cilantro sprigs for garnish

Preparation:
In a stockpot, heat the oil over medium heat. Add the onion and saute until soft, about 5 minutes. Stir cumin and coriander, reduce the heat to medium-low, stir in garlic and cook, stirring occasionally, until the onion is almost caramelized, about 35 minutes.
Add the potato slices, tomatoes, stock or broth and lemon zest and juice.
Bring to a boil over medium-high heat, cover, reduce the heat to low, and simmer until the potatoes are tender, about 30 minutes. Stir in salt, cayenne and black pepper to taste. Just before serving, stir in the chopped mint or cilantro.
Sprinkle with lemon zest to taste, garnish with mint or cilantro sprigs.
Serve hot.
Serves 4

I'm just now going to the courthouse to be a witness against the juvenile illegal immigrant that totaled my Alfa. This will be the 4th time as they have gotten a continuance the other 3 times. Might even happen again today as she had to get a different lawyer. What fun, can't wait!
