I finally used up my last batch of baked spaghetti and I have a sh*tload of red potatoes I need to use up before they walk away on their own. And I have several fresh jalapeño peppers handy. I won't be able to use the onions but I am ok with garlic so I will just use more of it (I usually double or triple the amounts of garlic shown anyways)

Bring to a boil over medium-high heat, cover, reduce the heat to low, and simmer until the potatoes are tender, about 30 minutes. Stir in salt, cayenne and black pepper to taste. Just before serving, stir in the chopped mint or cilantro.
Sprinkle with lemon zest to taste, garnish with mint or cilantro sprigs.
Serve hot.
Serves 4

I'm just now going to the courthouse to be a witness against the juvenile illegal immigrant that totaled my Alfa. This will be the 4th time as they have gotten a continuance the other 3 times. Might even happen again today as she had to get a different lawyer. What fun, can't wait!

Getting ready to go stand in line at the MAL-WART Pharmacy to get the meds prescribed by the ER Doc. I called first to find out if I could afford them first and they say they are busy today and the line is 30-45 mins long. I can't wait to get there and get started waiting.

I've got a doctor appointment at 2 pm EDT to get my sleep study results. I'm hoping that whatever was discovered can be treated and I'll be able to wake up without feeling hungover every day and I won't constantly feel like I'm unraveling at the seams for the rest of my life.

Going to take the "seriously talented" young musician that recently moved in upstairs to the Zoo Bar to meet Sean Benjamin, one seriously talented aging Blues musician and potential mentor - ear - validator.  This kid not only seems to "have it," but he also possesses that rare quality sadly lacking in so many people these days - class.  He seems sincere, diligent, intelligent, dependable, considerate, polite, helpful and kind.  All this and a music brain!  He practices for hours daily, he listens, he lives life moderately and with purpose.  So glad to know we can still grow em here in Nebraska!
