What kind of chorizo? They sell Mexican style here, which is made of lymph and salivary glands and has the consistency of slime.

Then there's the kind made with pork, and sold like ground burger.

Then, there's Spanish chorizo, which is more like a sopressata or pepperoni in consistency.

100% on the nose. I used to make sandwiches out of vienna sausages though, slice in half the long way, brown in a skillet then put on toast with american cheese and miracle whip. DID I EVER SAY MY MOM WAS FROM TEXAS well it's true. I know you never would have guessed. I want one of those now.
