I've wondered that a lot myself.  Here's the best I can figure: 
   1) well-crafted melodies and harmonies (good tunes)
   2) cogent or witty lyrics, sometimes both
   3) highly-produced recordings: multitracking, backing vocals balanced well, apropos background noises (Fresh Garbage, Mr. Skin) that aren't too loud, clean instument tracks, clear vocal tracks
   4) their songs have a great beat and I can dance to them

Some of their stuff sounds so fresh, it could have been recorded last month.

PS to sir242 below: I would say these guys are anti-glam — except of course, for the psychedelics.
