Maybe because this isn't the best version of the song. It kind of stops and starts. I'd prefer the studio version over this.

Cassell's Dictionary of Slang pretty much agrees with you. The "eagle flies/shits/screams/walks on Friday" came about as American and Australian slang in the 40s and referred to getting paid. Cassell's notes that the US silver dollar coin had an eagle engraved on the back. 

If you worked for the federal government or received benefits from it, your check may have had an eagle printed on it.

He said it, in a confessional tone, to Bono on the Rattle and Hum movie. He asked if someone could cover the chords for him, because he has "stupid fingers". Bone looked stunned and mumbled something about "yeah... Edge can handle that..." and the scene cut right into a BB solo, from the concert - fingers blazing! What a humble gentleman.

I know some will think this is blasphemy, but I don't get it...the whole BB King fascination...I've always thought he was overrated...I don't like his guitar tone... and don't hear anything in BB King that's even close to the passion with which Stevie Ray plays, or the raw side of Muddy Waters, etc. But like jmrz...I'm a white girl, so maybe I like blue-eyed soul better than the real thing...sad, I guess...

He's great and the song is fantastic, even white guys from from the British Isles can sound good doing it.

This is an absolutely fantastic album. I've had it for years and I never grow tired of listening to it. The track with John Lee Hooker rocks - their styles are so different, yet they pull out an amazing recording.
I thought it was Albert Collins in the background. I appreciate BB but love that Albert guitar.
